Homemade tortillas--less complicated than you'd think!
Ingredients
300g flour (T45/T55 if in France)
75g butter, softened and cut into cubes
Large pinch salt
Large pinch sugar
14-15 cl very warm water
Instructions
Rub the butter into the flour until you obtain something a bit "sandy"--all the butter should be absorbed by the flour: given the amounts, you'll have slightly greasy flour. Add the salt and sugar, then the water little by little until it forms a soft dough. Knead just enough to bring the dough together. Let it rest 5 minutes.
Divide into 10 balls of equal size. Leave them to rest for 20 minutes.
Meanwhile, preheat a cast iron skillet or a heavy frying pan with no oil on medium heat.
Roll out the first ball into a circle. Put it in the pan. When it starts developing large puffy bubbles (30 s to 1 min in, don't overcook!), flip it, and cook the other side a similar time as the first. Repeat with the other balls.
Store the tortillas in a kitchen cloth. Eat shortly afterwards
